Ingredients
- 2 lbs 93% lean ground turkey (raw weight; the macros assume the rendered fat is drained, per step 2)
- 1 can (28 oz) crushed tomatoes
- 1/2 cup diced white onion
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 1/4 cup low-sodium chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Method
- 1Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add onion, carrot, and celery. Cook stirring occasionally 5-6 minutes until softened and onion is translucent.
- 2Add garlic and cook 1 minute until fragrant. Push vegetables to the edges and add ground turkey to the center. Break apart and cook 8-10 minutes until fully browned with no pink remaining. Drain excess fat.
- 3Pour in crushed tomatoes and chicken broth. Stir everything together. Add oregano, basil, red pepper flakes, salt and pepper.
- 4Reduce heat to low. Simmer uncovered 20 minutes stirring occasionally until sauce thickens and deepens in color. Taste and adjust seasoning.
- 5Remove from heat. Stir in fresh parsley. Cool completely before portioning into 5 containers. Serve over zucchini noodles, spaghetti squash, or whole wheat pasta. Sauce deepens in flavor after day two.
