Ingredients

  • 1/2 cup rolled oats (40g)
  • 1 scoop vanilla protein powder (30g, about 24g protein)
  • 3/4 cup unsweetened almond milk (180ml)
  • 1/2 cup 0% plain Greek yogurt (113g)
  • 1 tsp fresh grated ginger
  • 1 tsp ground cinnamon
  • 1 tbsp chia seeds (12g)
  • 1 tbsp honey (21g)
  • 1/2 cup fresh blueberries (74g)

Method

  1. 1Combine the rolled oats, protein powder, almond milk, Greek yogurt, ginger, cinnamon and honey in a mason jar or airtight container. Stir until completely combined.
  2. 2Add the chia seeds and stir again. They expand overnight into a thick, pudding-like texture.
  3. 3Seal and refrigerate overnight — minimum 6 hours, maximum 3 days.
  4. 4In the morning, top with the fresh blueberries.
  5. 5Eat cold or microwave 60 seconds — either works.
