Mediterranean Shakshuka with Feta
Eggs poached straight into a smoked-paprika tomato sauce.

Ingredients
- 4 large whole eggs
- 1/2 cup liquid egg whites
- 1 can (14 oz) fire-roasted crushed tomatoes
- 1/2 cup diced roasted red peppers
- 1/4 cup diced white onion
- 1.5 oz crumbled feta cheese
- 1 tsp olive oil
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Fresh parsley to garnish
Method
- 1Heat the olive oil in an oven-safe skillet over medium. Add the onion and cook 3 minutes until softened.
- 2Add the garlic, cumin and smoked paprika. Cook 30 seconds until fragrant.
- 3Stir in the crushed tomatoes and roasted red peppers. Simmer 8-10 minutes until thickened.
- 4Whisk the egg whites and pour into the sauce. Make four wells and crack a whole egg into each.
- 5Cover and cook 6-8 minutes until the whites are set and the yolks still soft. Scatter the feta and parsley over the top and serve.
